Rich Moist Fruit Cake made with / without brandy. We recommend that fruit cake is covered with a layer of marzipan before covering with fondant. If this is not suitable, please specify at your consultation meeting and an alternative can be discussed.

Sponge Cake

We recommend that all sponge cakes are filled with a buttercream and covered with chocolate ganache before being covered with fondant.

Covering with ganache provides a very smooth base upon which to cover a cake. Alternatively, sponges can be covered with buttercream prior to being covered with fondant. All cakes will be covered with ganache unless you request otherwise.
